Carly is owner of The Seed, Boca Raton’s first specialty coffee shop and juice bar, a Registered Nurse, wife, and mom to 4 kids. Carly’s always been interested in health, and opened The Seed 5 years ago to share her passion for good coffee, fresh juices, and community. We love popping in for our morning caffeine fix + Carly is hella funny. I mean, we can def relate to “guac, chips, and tequila are just staples to keep me healthy.” Read on to hear how she stays balanced.

 

What does healthy eating mean to you?

Balance.

Healthy eating to me isn’t stressing yourself out to eat healthy i.e. counting calories. Totally defeats the purpose of being healthy when you stress about your meals.

I try to take the holistic approach, like a mind, body, soul thing, and sometimes (ok, I lied; more than sometimes), guac, chips, and tequila are just staples to keep me healthy.

We’re sure mornings at your house are busy! What are your quick, healthy breakfast staples?

Smoothies! So easy, and all (yes, all), 4 kids love them! A heaping cup of spinach to every smoothie no matter what else is in the blender… A current fave: almond milk, frozen banana, blueberry, fresh spin, almond butter, cinnamon, and mint!

What are some of your go-to dinner recipes that are quick and healthy?

Salmon (easy marinade of low sodium soy sauce, dijon mustard, and garlic, and then right in the oven--thank you, Ina Garten), paired with some sort of green (pre-chopped/bagged salad, steamed broccoli, etc.).

Or chicken on the grill--love the grill and feel quite cool using it (store bought chimichurri marinade--you said quick, right? :)…with sliced grilled sweet potatoes.

Since you’re running around all day, what do you normally snack on?

Love my FroPros [a protein snack bar made with organic nut butter and organic, plant-based protein]. All the flavors.

 

When you’re out to dinner at a fave restaurant, do you usually order healthy or do you YOLO and order what you want?

Ordering what I want normally isn’t the most fattening item on the menu. Dairy doesn't do well with me, so right there eliminates the creamy cheesy stuff.

When I’m steadily working out, I don’t shy away from the carbs, but on my slacker weeks I try (even when eating out) to be aware of my choices. However, if there are fries on the table, I will be having some, even if they are on your plate!

Of course, as owner of The Seed, we gotta ask: what’s your go-to coffee order?

O-A-T M-I-L-K er’thang. It is a slightly higher calorie alternative milk, but dang, it’s good. If I’m in a rush I always go with our drip coffee--black. Its delicious without adding a thing.
