Natalie is the Co-Creator of Gee Beauty, a multi-generational beauty brand, and a mom to 3 little ones. If anyone knows “food is beauty,” it’s Nat—this gal GLOWS. We loved hearing how Nat and her wife Rachel focus on creating a good relationship with food for their family, the reality of making versus buying lunch, and her tips for making a healthy dinner in 30 minutes max.

 

What does healthy eating mean to you? Has it evolved since you’ve met your wife and started a family?

Healthy eating is incredibly important to me and my family, but it comes from a place of enjoyment, rather than a place of omitting and sacrifice. Rachel, my wife, and I work together to encourage a good relationship with food, so whether that means a night with cauliflower rice or pizza, we work on making food fun and enjoyable to eat for us and our family.

We’re sure mornings at your house are busy! (Hi, 2 working moms and 3 kids.) What are your quick, healthy breakfast staples for you and the fam?

Mornings are straight up crazy. From the moment I open my eyes, it's go time. We start breakfast with fruit, sticking to the basics of apples, berries, bananas, and pineapple. I also have on hand So Delicious Coconut Yogurt, and I do make waffles as well. I like gluten free, and I alternate between frozen or homemade.

Do you make or buy your lunch?

Buy. I have the best intentions to make. I should prep, but there is only so much time in the day!

Your days are long. What foods keep you energized?

For me, food defines a lot, so I have to make sure my choices are smart. I start my days with fruit, and I make sure to eat tons of veggies. I notice when my days are filled with fruits and veggies, I feel the best and I am the happiest.

 

What are some of the Gee-Robinson family’s go-to dinner recipes that are quick and healthy?

We keep the meal rotation simple, and usually I have about 30 minutes to prep. We love baked salmon with cauliflower rice, and I will steam some broccoli. We also really like the Dr. Praeger’s Spinach Littles that are super easy to make, and I will do a brown rice pasta with tomato sauce. I will add frozen chopped spinach to as much as I can, and sliced cucumbers too. I like to make our family meals as balanced as they can, because there is a ton of snacking with veggie chips, cookies, and coconut ice cream bars. Have to keep it real!

We know you love amazing restaurants. When you’re out to dinner at a fave restaurant, do you usually order healthy or do you YOLO and order what you want?

Generally I keep it very on brand to my daily lifestyle choices, I will order veggies and fish, riceless sushi rolls, but if dessert comes to the table, I will most likely have bites. I feel like consistency is key, and I want to always keep in mind that in order for me to feel my best, it’s crucial to put delicious foods in my body that help reflect that good feeling.
