Plant Based Not Perfect Greek Tacos
Makes 2 servingS
To Get:
Almond flour tortillas (6)
Fresh mushrooms
Greek seasoning
Tomatoes
Cucumbers
Avocado
Kalamata olives
Shredded lettuce
Vegan (or regular) Feta
Tzatziki Sauce
To Do:
Sauté mushrooms in light olive oil & greek seasoning until browned.
Drain out water.
Chop up veggies, olives and feta.
Heat up tortillas in the oven or on a pan.
Top tortillas with: mushrooms, veggies, olives and feta. Drizzle w/ Tzatziki or your choice of sauce :)

For Tzatziki sauce, you can find pre-made at most grocery stores, including Trader Joe’s or you can make a homemade batch (recipe here from Love & Lemons).
Make a batch of quinoa and you can add some to the tacos to make them more filling or serve a side greek salad along with the tacos (like Steph Gee’s Quinoa Greek Salad)
