Plant Based Not Perfect Greek Tacos

To Get:

  • Almond flour tortillas (6)

  • Fresh mushrooms

  • Greek seasoning

  • Tomatoes

  • Cucumbers

  • Avocado

  • Kalamata olives

  • Shredded lettuce

  • Vegan (or regular) Feta

  • Tzatziki Sauce

To Do: 

  1. Sauté mushrooms in light olive oil & greek seasoning until browned.

  2. Drain out water.

  3. Chop up veggies, olives and feta.

  4. Heat up tortillas in the oven or on a pan.

  5. Top tortillas with: mushrooms, veggies, olives and feta. Drizzle w/ Tzatziki or your choice of sauce :)

 
 

ah.mi tips:

  • For Tzatziki sauce, you can find pre-made at most grocery stores, including Trader Joe’s or you can make a homemade batch (recipe here from Love & Lemons).

  • Make a batch of quinoa and you can add some to the tacos to make them more filling or serve a side greek salad along with the tacos (like Steph Gee’s Quinoa Greek Salad)
