Blackened Shrimp Tacos with Lime Crema
Recipe via Pink Owl Kitchen
To Get:
1 lb shrimp, peeled and deveined (can use frozen shrimp)
2 TBSP blackening seasoning: 1/2 tsp of the following: paprika; cayenne pepper; dried thyme; dried oregano; garlic powder; salt; black pepper (or skip this step and use a pre-made blackened seasoning!)
3 TBSP EVOO
Lime Crema: 4 TBSP sour cream; Zest & juice of half of a lime; 1/2 tsp salt; 1/2 tsp garlic powder
1/2 cup of crumbled Cotija cheese
Pico de Gallo for topping
Fresh cilantro for topping
Tortilla wraps
To Do:
In a medium bowl, generously season shrimp with blackening spice and add a drizzle of EVOO
Gently stir and set aside
Heat 2 TBSP of EVOO in a skillet over medium high heat
Add shrimp to pan
Cook shrimp for about 6-8 minutes until cooked through
Wrap tortilla in a damp paper towel and warm in microwave for 45 seconds
Spoon 6-8 shrimp in each warm tortilla
Drizzle lime crema over taco along with cheese, pico and cilantro
