Cheesy Plant Based Quesadilla

Makes 1 serving
To Get:
1/2 thinly sliced zucchini
1/4 sliced white or yellow onion
2 cups spinach
1 tsp taco seasoning
1 Siete tortilla
1/2 cup low fat mozzarella cheese
To Do:
Saute zucchini, onion, and spinach on a medium low heat until soft
Sprinkle taco seasoning and toss
Set aside
Spray Siete tortilla on each side with avocado oil spray
Grill on each side until crispy
Add veggie mix and vegan cheese
Fold tortilla, press, and grill for about 1 minute on each side

Feel free to add additional veggies
Optional: Top with tomatoes or salsa
