Black Bean Soup

Makes 4 servings

 
 

To Get:

  • 3 (15 oz) can black beans

  • 1 red bell pepper

  • 1/2 chopped white or yellow onion

  • 4 chopped celery stalks

  • 2 tsp cumin

  • 2 tsp garlic powder

  • 3 low sodium chicken bouillon cubes

  • 1 lime

  • 3 cups water

To Do: 

  1. Add all ingredients to Instant Pot

  2. Seal and set for 30 minutes

  3. Let cool and blend until smooth

  4. Squeeze in lime

 
 

ah.mi tips:

  • If you aren’t using an IP, add all ingredients to a medium sized pot and cook all ingredients on a medium-low heat for approx 1 hour, stirring frequently

  • Garnish with cilantro and light sour cream

  • Use low sodium black beans if you’re watching the salt
