Black Bean Soup
Makes 4 servings
To Get:
3 (15 oz) can black beans
1 red bell pepper
1/2 chopped white or yellow onion
4 chopped celery stalks
2 tsp cumin
2 tsp garlic powder
3 low sodium chicken bouillon cubes
1 lime
3 cups water
To Do:
Add all ingredients to Instant Pot
Seal and set for 30 minutes
Let cool and blend until smooth
Squeeze in lime

If you aren’t using an IP, add all ingredients to a medium sized pot and cook all ingredients on a medium-low heat for approx 1 hour, stirring frequently
Garnish with cilantro and light sour cream
Use low sodium black beans if you’re watching the salt
