Chicken Parm, But Make it Healthyish

To Get:

  • 4-5 chicken cutlets

  • 1 cup of breadcrumbs

  • 1 cup of shredded mozzarella

  • 1/2 cup of shredded parm

  • EVOO

  • 1 jar of marinara sauce

  • 1 cup of arugula

  • Lemon

  • Salt and pepper

 

To Do: 

1. Preheat over to 425

2. Combine breadcrumbs and parm in a bowl

3. In a separate bowl add EVOO

4. Dip cutlets in EVOO and then into mixture

5. Place cutlets on a greased baking sheet

6. Bake for 25 minutes

7. Flip cutlets and add marinara and mozzarella on top

8. Bake an additional 5 minutes

9. Add arugula to plates and top with squeezes lemon, salt and pepper

10. Add cutlets on top
