Chicken Taquitos

Makes 1 serving

 
 

To Get:

  • 8 oz frozen white meat chicken

  • 1/4 cup salsa verde

  • 3-4 Tbsp mild enchilada sauce (or hot if you like)

  • 2 Tbsp light sour cream

  • Pam or any cooking spray oil

  • Sea salt

  • 2 small Ole wraps

To Do: 

  1. Add chicken to instant pot for 15 minutes

  2. Remove chicken and shred in a large bowl

  3. Add in salsa, enchilada sauce, and light sour cream

  4. Mix all ingredients and set aside

  5. Spray both sides of each Ole wrap and sprinkle a dash of sea salt on each side

  6. Grill each side on a medium low heat until slightly crisp

  7. Remove wraps and roll in a few Tbsps of chicken mixture

  8. Top with a dollop of light sour cream

 
 

ah.mi tips:

  • Top with enchilada sauce and bake in oven

  • Saute spinach and add in mixture

  • Sub queso for sour cream in the chicken mixture
