Chicken Taquitos

Makes 1 serving
To Get:
8 oz frozen white meat chicken
1/4 cup salsa verde
3-4 Tbsp mild enchilada sauce (or hot if you like)
2 Tbsp light sour cream
Pam or any cooking spray oil
Sea salt
2 small Ole wraps
To Do:
Add chicken to instant pot for 15 minutes
Remove chicken and shred in a large bowl
Add in salsa, enchilada sauce, and light sour cream
Mix all ingredients and set aside
Spray both sides of each Ole wrap and sprinkle a dash of sea salt on each side
Grill each side on a medium low heat until slightly crisp
Remove wraps and roll in a few Tbsps of chicken mixture
Top with a dollop of light sour cream

Top with enchilada sauce and bake in oven
Saute spinach and add in mixture
Sub queso for sour cream in the chicken mixture
