Soul-Warming Veggie Chili
Makes 6 servings
To Get:
1 large sweet onion
1-2 jalapeños (optional)
3-4 cloves of garlic
1 large zucchini or yellow squash (optional)
2 bell peppers
1 can of tomato sauce
1-2 cans of diced tomatoes (depending on how saucy you want it!)
1 can kidney beans
1 can black beans
1 can sweet corn
To Do:
Dice all of the veggie ingredients and add them to a crockpot or stovetop pot in the order they are listed in. Simmer for 5-10 minutes.
Season generously with chili (or fajita) seasoning, garlic powder, cayenne pepper, turmeric, cumin and/or curry powder, and salt to taste.
Add the canned ingredients.
Adjust seasoning to taste. (Option to add 1 TBSP of brown sugar here).
Simmer on low for one hour.
