Soul-Warming Veggie Chili

Veggie Chili
 
 

Makes 6 servings

 
 

To Get:

  • 1 large sweet onion

  • 1-2 jalapeños (optional)

  • 3-4 cloves of garlic

  • 1 large zucchini or yellow squash (optional)

  • 2 bell peppers

  • 1 can of tomato sauce

  • 1-2 cans of diced tomatoes (depending on how saucy you want it!)

  • 1 can kidney beans

  • 1 can black beans

  • 1 can sweet corn

To Do: 

  1. Dice all of the veggie ingredients and add them to a crockpot or stovetop pot in the order they are listed in. Simmer for 5-10 minutes.

  2. Season generously with chili (or fajita) seasoning, garlic powder, cayenne pepper, turmeric, cumin and/or curry powder, and salt to taste.

  3. Add the canned ingredients.

  4. Adjust seasoning to taste. (Option to add 1 TBSP of brown sugar here).

  5. Simmer on low for one hour.
