To Get:

  • 4 cup baby arugula

  • 8 oz ball burrata cheese

  • 2 lb ripe tomatoes

  • 3 Tbsp EVOO

  • 1 Tbsp balsamic vinegar

  • 2 tsp salt

  • 1/2 tsp pepper

  • 6 prosciutto crisps (bake a single layer of prosciutto on a baking sheet for 12 min at 400 degrees, will crisp as cools)

 

To Do: 

  1. Scatter arugula on a platter and place burrata ball in center

  2. Break burrata for creamy center

  3. Arrange sliced tomatoes around burrata

  4. Drizzle w/ olive oil and balsamic

  5. Season platter w/ salt, pepper, and prosciutto crisps
