Makes 4 servings

 
 

To Get:

  • 1 cup cherry tomatoes

  • 1 can drained and rinsed black beans

  • 1 can drained and rinsed black eyed peas

  • 1 cup drained and rinsed corn

  • 1 diced jalapeno

  • 3/4 cup diced red pepper

  • 1/2 cup diced red onion

  • 1/3 cup of cilantro (optional)

  • 1 avocado

  • 2 limes

  • Salt & pepper to taste

To Do: 

  1. Cut cherry tomatoes in half

  2. Add tomatoes, black beans, black eyed peas, corn, jalapenos, bell peppers, onions, and cilantro in a bowl

  3. Add lime juice, salt & pepper

  4. Gently toss to coat

  • So good in a wrap with spicy hummus and hot sauce

  • Use leftovers as a filling in a quesadilla with shredded cheese

  • Makes for an easy healthy app for a party served with tortilla chips

  • Throw it over greens for a plant protein packed salad

  • Sprinkle with cayenne or paprika for some added flavor!
