Crispy Shrimp Quinoa Bowl

To Get:

  • 8-9 large raw frozen shrimp (peeled and deveined)

  • 1 cup quinoa

  • 2 cups vegetable broth or water

  • 2 Tbsp olive oil

  • 1-2 cloves garlic (minced)

  • a healthy handful of spinach or your favorite leafy greens



 

To Do: 

  1. Thaw shrimp and rinse quinoa

  2. Cook quinoa in broth according to directions on package

  3. While quinoa is cooking saute olive oil and garlic in a pan on Medium heat

  4. Add shrimp to the pan and cook on Medium-High heat for about 5-7 minutes or until desired crispness

  5. Add greens to your bowl and massage with a touch of oil

  6. Fluff quinoa in the pot with a fork and add on top of greens along with the shrimp
