Johnson's Tomato Soup

Makes 4 servings

 
 

To Get:

  • 6 beefsteak tomatoes

  • 1/2 white onion

  • 2 cups fresh spinach

  • 2 vegetable or chicken bouillon cubes

  • 2 tsp garlic powder

  • 1 Tbsp Italian seasoning

  • Salt & pepper

To Do: 

  1. Cut tomatoes into bite sized pieces

  2. Chop onions

  3. Add all ingredients to instant pot (if making on stove top, refer to ah.mi tips)

  4. Seal and set IP for 15 minutes

  5. Release and let cool

  6. Scoop veggies out and blend (you don’t need excess liquids)

 
 

ah.mi tips:

  • Add a Tbsp of light sour cream and some croutons

  • Freeze broth for future soups

  • If not using an IP, follow same steps, but add to a medium sized pot. Let simmer for about 40 minutes and blend as per above directions
