Faux-Pho Soup

Makes 4 servings

 
 

To Get:

  • 1 Tbsp EVOO

  • 1 Tbsp diced shallots

  • 1 bunch green onions (green and white divided)

  • 2 cloves minced garlic

  • 2 Tbsp grated ginger

  • 6 cups of water

  • 3 low sodium bouillon cubes

  • 2 Tbsp low sodium soy sauce

  • 1 cup sliced mushrooms

  • 8 oz package Shirataki noodles (drained and rinsed)

  • 1 head bok choy

To Do: 

  1. Heat EVOO in a medium sized pot over medium heat

  2. Add diced shallots until soft and translucent

  3. Chop the end off of each green onion and divide the white and the green parts

  4. Finely chop the white part of onion and add to pot along with the minced garlic, and grated ginger

  5. Stir until garlic and ginger is fragrant

  6. Pour in the water, add bouillon cubes as well as soy sauce

  7. Let water come to a boil and then reduce to a medium heat

  8. Add mushrooms, noodles, and bok choy

  9. Let simmer for approx 10 minutes

 
 

ah.mi tips:

  • If you like it hot, add some red pepper flakes

  • For less sodium, eliminate the soy sauce (it’s just as good without)
