Zucchini Boats

Makes 4 servings

 
 

To Get:

  • 4 medium sized zucchini

  • 1 lb ground chicken or turkey

  • 1/2 cup buffalo wing sauce

  • 1 cup low fat shredded mozzarella cheese

To Do: 

  1. Preheat over to 400 degrees F

  2. Spray a baking dish

  3. Cook ground chicken or turkey on stove top until browned

  4. Removed from heat and stir in buffalo sauce

  5. Cut zucchini lengthwise and scoop out seeds

  6. Place “boats” on baking dish and spoon in chicken/turkey mixture

  7. Sprinkle with cheese

  8. Cover with foil and bake for 35 minutes

  • Broil for last two minutes to crisp cheese

  • Top with some grated parm
