Salmon Burgers

Makes 5 servings

 
 

To Get:

  • 2-4oz frozen salmon fillets

  • 2 Tbsp EVOO

  • 1/2 chopped red bell pepper

  • 1/2 chopped yellow onion

  • 1 cup chopped spinach leaves

  • 1 tsp Worcestershire sauce

  • 2 Tbsp light mayo

  • 2 eggs

  • 1/4 cup panko

  • 1/4 cup grated parm

  • 1 tsp garlic powder

  • Salt & pepper

To Do: 

  1. Bake salmon according to package, remove skin, and flake into a medium sized bowl

  2. Heat 1 Tbsp EVOO and saute red peppers and onions until golden brown

  3. Add spinach and cook until wilted

  4. Remove veggies and add to bowl with salmon

  5. Add Worcestershire, mayo, eggs, panko, parm, garlic powder, salt, and pepper

  6. Mix until well combined

  7. Form into 5 patties and saute for 3 minutes on each side with the remaining EVOO

  • Squeeze fresh lemon on top for added flavor

  • Add on top of a bed of arugula or greens of choice
