Chick Chick Pasta Salad (inspired by eatwell101)
Makes 4 servings
To Get:
Shredded roto chicken
Chickpea pasta (we 𧑠Banza)
Avocado
Chopped red onion
Halved cherry tomatoes
Fresh chopped basil
**Optional homemade dressing:
1/2 cup white wine vinegar
1 Tbsp Italian seasoning
3/4 cup EVOO
Salt
Pepper
To Do:
In a bowl, add shredded chicken, avocado, onion, tomatoes, and basil
Combine dressing ingredients in a separate container (or use dressing of choice)
Drizzle the salad w/ dressing
Toss gently until combined
Serve immediately or chill for later!
