Lucky Beans Soup

Makes 8 Servings

 

To Get:

  • 8 boneless and skinless chicken tenderloins

  • 1 can low/reduced sodium black beans (drained and rinsed)

  • 1 can diced tomatoes with green chiles

  • 1 can corn (drained)

  • Approx. 32 oz low sodium chicken broth (1 box)

  • 1 Tbsp chili powder

  • 1 Tbsp cumin

To Do: 

  1. Add the chicken, black beans, tomatoes, corn, broth, chili powder, and cumin to your instant pot (see tips below for stove top option)

  2. Move valve to “seal” and set for 25 minutes

  3. Move valve to “vent” when ready

  4. Shred chicken and squeeze lime in soup

  5. Top with a drop of sour cream and sprinkle cilantro

 
 

ah.mi Tips:

  • If you don’t have an instant pot, a rotisserie pre-cooked (“Roto Chick”) from the store works great (just shred and add to soup and cook on low for 25 minutes for flavors to marinate)

  • Add hot sauce or chopped jalapeños when serving if you like even more spice

  • For leftovers, it’s tasty served over Cauli rice or used as a topping in a wrap (we like Siete Almond Flour Tortillas or Ole Xtreme Wellness Tortillas)

  • Optional: lime, sour cream, and cilantro
