RJ's Weekend Quesadilla

Makes 1 Serving

 

To Get:

  • 1/4 can of refried beans

  • 1/4 cup chopped roasted red peppers (pre-made in can)

  • 1 lime

  • 3 chopped mushrooms

  • 1 cup spinach

  • 1/4 cup shredded cheese

  • 1 Ole High Fiber tortilla

To Do: 

  1. Mix refried beans and chopped roasted red peppers together

  2. Add lime juice

  3. In a pan, saute mushrooms, and spinach

  4. Spread a thin layer of bean mixture on tortilla

  5. Add veggie mixture on top of bean mixture

  6. Add shredded cheese

  7. Spray pan with cooking spray and set to a medium low heat

  8. Add tortilla to pan and fold

  9. Grill on each side for 3-4 minutes (or until crisp on each side)

  10. Cut and serve with avocado, salsa, or hot sauce
