No-Bake Chocolate Chip Cookies

To Get:

  • 1 1/2 cups roasted, salted cashews

  • 8 oz pitted dates

  • 3 Tbsp coconut oil

  • 2 tsp vanilla extract

  • 2 cups old fashioned oats

  • 1 cup semi sweet chocolate chips

  • Sea salt

 

To Do: 

1. Line a baking sheet with parchment paper

2. In a food processor, combine cashews, dates, coconut oil, vanilla, and oats.

3. Pulse until well combined (add tsp coconut oil and splash of water if dough seems dry)

4. Stir in chocolate chips

5. Roll dough into 18-20 Tbsp size balls and place on baking sheet

6. Press down on each dough ball to flatten into circles

7. Freeze for 10-15 minutes

8. If desired, melt approx. 4 oz of chocolate chips and drizzle on top

9. Sprinkle with sea salt

10. EAT
