Easy Berry Cobbler

Makes 6 servings

 
 

To Get:

  • 5 cups mixed berries (can use frozen!)

  • Juice of 1 lemon

  • 2 cups almond or hazelnut flour

  • 2 tbsp maple syrup

  • 1/4 melted cup coconut oil

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Pinch of Himalayan salt

To Do: 

  1. Place berries in a 8x8 casserole dish

  2. Squeeze lemon juice over berries

  3. Preheat oven to 350 degrees

  4. Place all other ingredients in a bowl and stir until a soft dough forms

  5. Press dough onto berry filling

  6. Cover the casserole dish with foil and bake for about 30 minutes

  7. Remove foil and bake another 15-25 minutes (or until as crispy as you like it)

  • Serve with coconut whipped cream; the Trader Joe’s frozen Very Cherry Berry Blend works great for the frozen berries!
