Hollice's Egg & Pepper Cups

Makes 2 servings

 
 

To Get:

  • 2 medium bell peppers (any color)

  • 1/4 tsp salt, divided

  • 1/4 tsp black pepper, divided

  • 4 large eggs

  • 1/4 cup mozzarella cheese (or any cheese)

  • A pinch of finely chopped chives

To Do: 

  • Preheat oven to 400 degrees F

  • Coat a baking pan with olive oil spray

  • Cut bell beppers in half through the stem end

  • Remove ribs and seeds

  • Place the peppers in the pan, cut side up

  • Sprinkle peppers with salt & pepper

  • Bake the peppers for 15 minutes to soften

  • Remove pan from oven and crack one egg in each pepper

  • Sprinkle with remaining salt & pepper and top with cheese

  • Bake until eggs are set for approx 15 minutes

  • Sprinkle with chives, if desired
