Hollice's Egg & Pepper Cups

Makes 2 servings
To Get:
2 medium bell peppers (any color)
1/4 tsp salt, divided
1/4 tsp black pepper, divided
4 large eggs
1/4 cup mozzarella cheese (or any cheese)
A pinch of finely chopped chives
To Do:
Preheat oven to 400 degrees F
Coat a baking pan with olive oil spray
Cut bell beppers in half through the stem end
Remove ribs and seeds
Place the peppers in the pan, cut side up
Sprinkle peppers with salt & pepper
Bake the peppers for 15 minutes to soften
Remove pan from oven and crack one egg in each pepper
Sprinkle with remaining salt & pepper and top with cheese
Bake until eggs are set for approx 15 minutes
Sprinkle with chives, if desired
