To Get:

Chicken Tinga:

  • 1 cup chopped sweet onion

  • 1 Tbsp EVOO

  • 2 cloves minced garlic

  • 1-2 chopped chipotle peppers in adobo sauce

  • 1/2 tsp cumin

  • 3/4 cup can crushed fire-roasted tomatoes

  • 1/4 cup chicken stock

  • 1/2 tsp salt

  • 3 cups shredded chicken (roto chick works!).

For serving (all optional/add your fave toppings!):

  • Siete tortillas

  • Smashed avocado/guac

  • Cilantro

  • Diced red onion

  • Crumbled cotija cheese

 

To Do: 

  1.  Sautรฉ onion in EVOO for 4 min

  2. Add garlic and cook for 30 sec

  3. Stir in chipotle peppers and cumin

  4. Add in crushed tomatoes, stock, and salt

  5. Bring to a simmer and cook for 7 min

  6. Next, blend the tomato mixture until smooth

  7. Return blended sauce to pan over low heat

  8. Add the cooked shredded chicken and cook for 5 min

  9. Assemble tacos in tortillas
