To Get:

  • 1 box of lentil pasta

  • Garlic

  • Mushrooms

  • Artichoke hearts

  • Sun-dried tomatoes

  • Spinach leaves

  • Optional: EVOO to sauté vegetables (or you can use the marinade from sun-dried tomatoes to sauté)

 

To Do: 

  1. Boil lentil pasta for approx. 6 min

  2. In a fry pan, sauté garlic, mushrooms, artichoke hearts, sun-dried tomatoes, and spinach leaves until soft and fragrant

  3. Add veggie mixture on top of lentil pasta and enjoy!
