Cilantro-Lime "Rice" & Shrimp

Makes 2 servings

 
 

To Get:

  • 1 Tbsp EVOO

  • 1/4 white or yellow onion

  • 8 small frozen (or fresh) shrimp

  • 8 oz package Miracle Rice (shirataki rice)

  • 1/4 cup chicken broth

  • Juice from 1/2 lime

  • 2 Tbsp chopped cilantro

  • Salt & pepper

To Do: 

  1. Heat oil in pan on a medium heat

  2. Saute onions until soft

  3. Add shrimp to pan

  4. Drain Miracle Rice in a colander and rinse with cold water

  5. Add to pan

  6. Next, add chicken broth until it’s absorbed well

  7. Add mixture to a bowl and squeeze in lime juice

  8. Top with cilantro

  9. Sprinkle with salt & pepper

 
 

ah.mi tips:

  • If you like it hot, add some red pepper flakes

  • If you aren’t a fan of cilantro, add in another seasoning of choice
