To Get:

  • 1 lb ground turkey

  • Spinach (fresh or frozen, but if using frozen, make sure to drain liquids very well)

  • 2 oz (1/4 block) of reduced fat cream cheese

  • Shredded mozzarella cheese

  • Red sauce (we like Rao’s Arrabiata)

  • Green lentil lasagna shells

  • Salt

  • Pepper

  • Optional: parmesan cheese

 

To Do: 

  1. Preheat over to 400 degrees.

  2. First, brown the ground turkey on stovetop until cooked or cook in Instant Pot for 15 min

  3. Remove ground turkey

  4. In same pan (if you cooked on stovetop), add spinach and cream cheese, and sauté on a Medium Low heat until soft

  5. In a small baking pan, spoon in a few tablespoons of red sauce and spread

  6. Add a layer of shells and spread the spinach and cream cheese mixture on top, then the turkey, then the sauce , and finally the mozzarella cheese

  7. Repeat as many layers if desired. For the final layer, top with lasagna shells, add remaining red sauce, and top with some shredded cheese.

  8. Cover in foil and bake in oven for 25 min. Uncover and bake for 10 more minutes. Let rest for 15 minutes before serving.

  9. Enjoy! 

 
 
 

ah.mi Tip: Great for dinner and leftovers the next day! Use any veggies you have in the fridge and make an all veg Option or add to your ground Turkey mixture!
