Sizzling Feta Shrimp

Makes 2 servings

 
 

To Get:

  • 12 large uncooked shrimp (peeled and deveined)

  • 3 Tbsp EVOO

  • 2 cloves of finely chopped garlic

  • 1 Tbsp of finely chopped parsley

  • 1/8 tsp salt

  • 2 1/2 oz feta

  • Black pepper to season

To Do: 

1. Heat 2 Tbsp EVOO over medium heat

2. Add shrimp, garlic and 1/2 of the parsley

3. Cook for 1 minute and stir continuously (if using frozen shrimp cook for 2 minutes)

4. Remove shrimp and place on a baking pan

5. Crumble feta over shrimp

6. Broil in oven for 2-4 minutes

7. Remove from oven and drizzle with remaining EVOO and juices from pan

8. Garnish with remaining parsley and pepper

  • Serve the shrimp over a greek salad for a complete meal

  • Great also served over brown or cauliflower rice
