Sweet Green Chile Tacos

Makes 4 servingS

 
 

To Get:

  • 4 peeled and cubed sweet potatoes

  • 2 Tbsp EVOO

  • 2 tsp cumin

  • 2 tsp chili powder

  • 1 tsp coriander

  • 1 4oz can green chiles

  • 8 Siete tortillas

To Do: 

  1. Preheat oven to 450 degrees

  2. Mix sweet potatoes in bowl with EVOO and seasonings

  3. Spread sweets on a baking sheet and bake approx 20-25 minutes (until tender)

  4. Remove sweets and add to a bowl

  5. Mix green chiles with sweet potatoes

  6. Heat tortillas and fill with sweets mixture

  7. Add sprinkle of shredded cheese and avocado crema if desired

  • Microwave sweets for a few minutes before peeling and cutting to make it easier

  • Include black beans for added protein and fiber that will leave you feeling satisfied
