Communal Kitchen's Farro Salad

Makes 1 Serving

 

To Get:

Salad:

  • 2 cups of arugula

  • 5 chopped cherry tomatoes

  • 1/4 cup thinly sliced radishes

  • 1/2 oz unshelled, toasted pistachio nuts

  • 1/4 cup shredded parm cheese

  • 1/4 cup farro (cook as directed)

Dressing:

  • 1/2 cup EVOO

  • 1 tsp dijon mustard

  • 1/4 cup lemon juice

  • 2 garlic cloves (minced or pressed)

To Do: 

1. Pile on each ingredient

2. Add 2 Tbsp dressing

3. Toss

Dressing:

1. Add all ingredients to blender

2. Puree until smooth

  • Store extra dressing for future salads!
