Sheet Pan Veggies

Makes 4 servings

 
 
 

To Get:

  • 1 small, peeled sweet potato

  • 1 zucchini

  • 1 squash

  • 1-2 cups broccoli

  • 2 Tbsp EVOO

  • 1 tsp Italian seasoning

  • 1/4 cup grated parm cheese

  • 1 tsp garlic powder

  • Salt & pepper

To Do: 

  1. Preheat oven to 400 degrees F

  2. Cut all veggies into bite sized pieces

  3. Spread veggies evenly across a foiled and greased sheet pan

  4. In a bowl, whisk EVOO, Italian seasoning, parm cheese, garlic powder, salt, and pepper

  5. Sprinkle mixture over veggies and mix with hands to evenly coat

  6. Bake for 25-30 minutes

  • Use as a side dish, or add to quinoa and make a meal

  • Leave off the cheese to make this vegan
