Sheet Pan Veggies

Makes 4 servings
To Get:
1 small, peeled sweet potato
1 zucchini
1 squash
1-2 cups broccoli
2 Tbsp EVOO
1 tsp Italian seasoning
1/4 cup grated parm cheese
1 tsp garlic powder
Salt & pepper
To Do:
Preheat oven to 400 degrees F
Cut all veggies into bite sized pieces
Spread veggies evenly across a foiled and greased sheet pan
In a bowl, whisk EVOO, Italian seasoning, parm cheese, garlic powder, salt, and pepper
Sprinkle mixture over veggies and mix with hands to evenly coat
Bake for 25-30 minutes

Use as a side dish, or add to quinoa and make a meal
Leave off the cheese to make this vegan
