Super Bowl Spin Dip (ah.mi Style)

MAKES 4 SERVINGS

To Get:

  • 20 oz chopped spinach (frozen)

  • 2 Tbsp Evoo

  • ½ large onion, finely chopped

  • 1 Tbsp minced garlic

  • 1 medium carrot, finely grated

  • 2 cup 2% greek yogurt

  • ¼ cup light mayo

  • Salt & pepper

To Do: 

  1. Defrost spinach and remove excess water

  2. Add spinach to a bowl

  3. Preheat skillet on a medium heat and swirl oil to coat pan

  4. Add onion, garlic and carrot to pan

  5. Saute for approx 7 minutes 

  6. Add veggies to spinach

  7. Mix in yogurt, mayo, s&p and mix
